Creamy pepper pasta is a brilliant way to use up vegetables and create a nutritious dinner without it screaming vegetables. This is especially a winner with my kids and has a delightful creamy consistency.

Creamy Pepper Pasta
Ingredients
Ingredients: (for 2-4 persons):
- 2 Red peppers
- 1 Green pepper
- Olive oil
- 2 Garlic cloves
- 1 Red onion
- 50 g Cream cheese
- 1 dl Cream
- Salt and pepper
- Lemon juice (to taste)
Instructions
Instructions:
- Chop the greens and mix with some olive oil. Cook until tender in the oven for about 30 minutes at 220 degrees.
- Use a mixer to make a puree. Then add the cream cheese and cream.
- Add salt, pepper and lemon juice to taste. Blend into the pasta and serve.
