Sugar Knots
Ingredients
Ingredients for rolls:
- 400 g wheat flour
- 225 ml whole milk
- 120 g sugar
- 3 tsp dry yeast for sweet dough
- 1 tsp vanilla sugar
- A pinch of salt
- 50 g butter
- 1 egg (for brushing)
Topping:
- Butter
- Sugar
Instructions
Instructions:
- Mix all the dry ingredients except for the yeast. Mix the yeast with the milk and heat it to approximately 30 degrees Celsius.
- Then, combine the milk mixture with the dry ingredients and knead for a good 10 minutes.
- Add the butter and let it knead for an additional 10 minutes. The secret to fluffy yeast pastry lies in the kneading, so don't skip this step.
- Place the dough in the oven at 50 degrees Celsius (convection) and let it sit for about 60 minutes.
- Roll out the dough into a large rectangle and spread a generous amount of butter and sugar on it.
- Fold the dough in half and cut it into pieces.
- Braid as shown in the video below and place them on a baking sheet or in muffin cups as I have done.
- Then, put the rolls back in the oven for proofing for about 20 minutes at 50 degrees Celsius.
- Finally, bake at 175 degrees Celsius for approximately 15 minutes.
