Mix all the dry ingredients except for the yeast. Mix the yeast with the milk and heat it to approximately 30 degrees Celsius.
Then, combine the milk mixture with the dry ingredients and knead for a good 10 minutes.
Add the butter and let it knead for an additional 10 minutes. The secret to fluffy yeast pastry lies in the kneading, so don't skip this step.
Place the dough in the oven at 50 degrees Celsius (convection) and let it sit for about 60 minutes.
Roll out the dough into a large rectangle and spread a generous amount of butter and sugar on it.
Fold the dough in half and cut it into pieces.
Braid as shown in the video below and place them on a baking sheet or in muffin cups as I have done.
Then, put the rolls back in the oven for proofing for about 20 minutes at 50 degrees Celsius.
Finally, bake at 175 degrees Celsius for approximately 15 minutes.
