Sugar Knots

Ingredients

Ingredients for rolls:

  • 400 g wheat flour
  • 225 ml whole milk
  • 120 g sugar
  • 3 tsp dry yeast for sweet dough
  • 1 tsp vanilla sugar
  • A pinch of salt
  • 50 g butter
  • 1 egg (for brushing)

Topping:

  • Butter
  • Sugar

Instructions

Instructions:

  • Mix all the dry ingredients except for the yeast. Mix the yeast with the milk and heat it to approximately 30 degrees Celsius.
  • Then, combine the milk mixture with the dry ingredients and knead for a good 10 minutes.
  • Add the butter and let it knead for an additional 10 minutes. The secret to fluffy yeast pastry lies in the kneading, so don't skip this step.
  • Place the dough in the oven at 50 degrees Celsius (convection) and let it sit for about 60 minutes.
  • Roll out the dough into a large rectangle and spread a generous amount of butter and sugar on it.
  • Fold the dough in half and cut it into pieces.
  • Braid as shown in the video below and place them on a baking sheet or in muffin cups as I have done.
  • Then, put the rolls back in the oven for proofing for about 20 minutes at 50 degrees Celsius.
  • Finally, bake at 175 degrees Celsius for approximately 15 minutes.
